One staple of a successful plant-based diet is an ample amount of seitan.

Seitan

Seitan is wheat gluten. If you have been diagnosed with celiac disease, have a wheat allergy, or have a gluten intolerance, seitan is not for you. But you may want to try other protein-rich meat substitutes like tofu or tempeh. As for seitan, it can be bought at health food stores. As word of the benefits of eating a plant-based diet spreads, many supermarkets are beginning to carry it as well. Like meat, seitan must be refrigerated so, depending on the brand, you may find it either in the frozen food section or one of the refrigerator cases.

Seitan can be made at home too. It involves hours of periodic soaking, then rinsing wheat flour until all the starch has been rinsed away and only sinewy strands of gluten remain. When used in recipes, its chewy texture mimics meat. And depending on the marinade or sauce you pre-soak it in, seitan can easily fool meat-eaters into thinking they're eating meat when it's stir-fried, sautéed, or used in tacos or similar recipes.

Is Seitan Nutritious?

Yes. It is low in carbs and high in protein. It is also high in iron. One serving of seitan provides you with:

  • Protein - 20 grams
  • Carbohydrates - 4.8 grams
  • Fiber - 1.2 grams
  • Fat - 1.2 grams
  • Iron - 8 mg (100% of the recommended daily intake (RDI) if you're a man and 44% if you're a woman

An average-sized serving contains only 108 calories.
